1. Obtain the BRCGS Global Standard for Food Safety (Issue 9)

Download the latest version of the BRCGS Standard from the official website (www.brcgs.com). It covers the comprehensive food safety and quality management system requirements.

Ensure the standard is reviewed for industry-specific areas such as allergen control, microbiological safety, and labelling regulations.

2. Familiarise Yourself with the Requirements

All relevant staff, including senior management, should thoroughly read and understand BRCGS requirements.

Conduct a detailed review to compare current practices against these requirements. For bakeries, focus on allergen management related to ingredients like nuts, seeds, and gluten. For dairies, ensure compliance in pasteurisation, cold chain logistics, and microbiological testing.

Identify any gaps, such as inadequate cleaning protocols, outdated documentation, or missing traceability measures.

3. Register with a BRCGS-Approved Certification Body

Choose a certification body accredited to operate within the EU and experienced in bakery and dairy production.

Certification bodies will handle the assignment of auditors, conduct the audit, and issue the final report. Registration should be completed well in advance, ideally six months before the audit.
